The Big Joe model is a more flexible kamado style ceramic oven and is perfect for large families or entertaining a crowd .

You decide if you want to cook:

1. With direct heat: ember or iron.

2. With indirect heat: oven.

3. At low temperature and very slowly, or at traditional temperatures.

4. With or without smoke.

5. As a railway pot: to make stews in the Kamado.

6. As a smoker.

If you use the deflector (which is one of the included accessories), you cook with Indirect heat, it is the hot air that cooks like in a wood oven (the bread and dough come out with the same aroma as before).

If the deflector is not used, it is cooked with direct heat, the food is placed directly on top of the coals, it is like a barbecue, but you can control the temperature to your liking, and at low temperatures you can smoke the pieces to your liking.

If you cook below ±150ºC, we are talking about low temperature cooking, and consequently more time is needed, at ±100ºC, there are recipes that are completed in 10-14 hours, it is authentic ” Slow cooking”. And you also choose if you do it with or without smoke. As  a railway pot,  it is when the pot is placed on the grill over the coals, and it is the reference method for making stews.
